The menu at La Brasserie includes many now neglected French classics such as parmentier de pied de cochon sauce Gribiche – a little crisp cake of slow braised chopped trotters; cassoulet de cuisse de grenouille et escargot en croûte – frogs legs and snails cooked with Pernod; poulet en vessie (for 2) – a whole chicken steamed in a pouche with Champagne and morels; and Mont Blanc – Armagnac and sweet chestnut cream on meringue. A three-course meal should cost around £25-£30 per head.
